PAD THAI CHICKEN
- 2.5 tablespoons Chicken sauce ( Sweet Thai chilli sauce)
- 1 tables poons Dark soysauce
- 1 tablespoons light soysauce
- water
- 2 tablespoons vegetable oil
- Rice noodles
- 1 large eggs
- Chicken sliced or (Shrimp as you preferred )into a bite peice
- 1 cloves garlic, minced
- 2- 3 medium shallot, minced
- chopped unsalted roasted peanuts
- bean sprouts if can’t find can use cabbage and carrot (thin sliced)
- Chinese chives , or spring onion cut into 1½-inch lengths
## cover rice noodle with body warm temperature water in large bowl; soak until softened, pliable, and limp about 20 minutes.##
-Heat 2 tablespoon oil in skillet , wok or pan(preferably nonstick) over high heat
-Add garlic, shallot stirring constantly fried until it smells good.
-Add Chicken fried until chicken is cooked.
-Add soaked noodle to the pan, follow by all sauces (chicken sauce, dark soy sauce, light soy sauce, tossing constantly until noodles are evenly coated and tender if not add some water to it
- After the noodle cooked, Add bean sprouts or vegetable you use, and Chinese chives over noodles; mixed well tossing constantly
- Make room for eggs by pushing noodles aside. Cracked eggs and scrambled it , leave it until it’s cooked then take a noodle on top of the egg. turn off the heat.
- two ways to serve, Flip the egg to the top of the noodle or just mixed it together.
- Transfer noodles to serving platter, sprinkle with remaining bean sprouts, Chinese chives, roasted peanut , wedged sliced lime
Tofu is a good and common addition to pad Thai. If you like, add 4 ounces of extra-firm tofu or pressed tofu cut
into ½-inch cubes (about 1 cup) after the chicken cooked.
